Baked Eggplant Topped With Tuna
Preheat oven to 350*
Ingredients:
2 medium sized eggplants, peeled, sliced into 2" slices
1 1/2 cups marinara sauce
12oz water packed solid white albacore tuna, rinsed, squeezed
pepper
1 large onion, sliced
8oz large mushrooms, rinsed, stems trimmed
Recipe Mix:
Olive oil spray your baking pan. Place eggplant slices on bottom, then top slices with half of the marinara sauce. Now evenly top pieces with tuna, then lightly pepper each. Lay some onion on top of each slice then stuff the mushrooms around the slices. Next pour remaining marinara sauce evenly over slices. Bake 50 minutes! Absolutely Delicious!!

Baked Crab Egg Rolls
Preheat oven to 350*
Ingredients:
20 egg roll wrappers
24oz flake style crab
1 bunch green onions, chopped
2 Tbsp garlic, minced
Recipe Mix:
Mix all the ingredients together, except wrappers. Fill a cereal bowl water with warm water. Next olive oil spray 2 cookie sheets. Now on a large chopping board, or plate, lay one wrapper down, wet your fingers and by hand grab at least 2 Tbsp. of mix and place in middle of wrapper. Now fold all sides over to seal, wrap it up like you would bundle a baby, using your wet fingers to help seal the dough, wet more if needed. Place seam side down onto sheet. Either add more mix or less to next wrapper, your choice on how big or little you want to make these. Make as many as you can til mix is gone, they should be several inches apart on baking sheet. Lightly and quickly olive oil spray tops of wraps before placing in oven. Bake 12 minutes then flip, now bake another 13 minutes til golden on both sides. Depending on your oven you may need to adjust time on baking on how crispy you want them. Let them sit 5 minutes to firm up before serving. Serve with your choice of dip, I use hot garlic mustard to dip these in. Delicious:)

Baked Tilipia Wrapped in Prosciutto

Preheat oven to 350:
Ingredients:
4 pieces tilipia, thawed
1/2 cup tomato pesto
12 pieces of prosciutto
toothpicks

Recipe Mix:
Olive oil spray a 13 x 9 baking dish. Make 4 rows, 3 pieces each of prosciutto on bottom of pan. Now lay a piece of tilipia on each, spoon 2 Tbsp. pesto on top. Fold prosciutto over fish and secure with toothpicks. Bake for 20 to 30 minutes til fish is firm/flaky. Enjoy...Love this recipe :)

White Asparagus Shrimp Stir-fry

Ingredients:
15 stalks asparagus, peeled, broken in half
5 stalks of celery, chopped
28 oz diced tomatoes, rinsed, drained
1 Tbsp basil
1 Tbsp chopped chives
1 1/2 lbs shrimp, thawed, tail off
1 cup red wine

Recipe Mix:
Turn your wok to setting 6 to heat up, olive oil spray your wok, or use 2 Tbsp olive oil to coat. Place your asparagus, celery, tomatoes, basil, chives, and wine into your wok, turn up to setting 8, continue to stir for several minutes. Now pepper to your desire. Next throw your shrimp in, mix well. Set your Put lid on and cook another 8 minutes, stir every couple. Enjoy!!

Calamari Stew
Ingredients:
1 large onion, chopped
3 Tbsp garlic, chopped
2 - 28 oz cans diced tomatoes
2 tsp thyme
2 tsp basil
1 tsp dill weed
1/2 cup red wine or white wine, fish usually calls for white...I used red
1 cup grated skim romano cheese
2 lbs, frozen calamari, NOT BREADED, thawed
Recipe Mix:
Olive oil spray your large frying pan and turn heat to medium high. Place onion, garlic into pan and saute for 5 minutes while stirring. Next, add your tomatoes, thyme, basil, dill weed, mix well. Now add your wine then cheese, mix well and put lid on and turn burner down to low and let cook 20 minutes. Lastly, place your calamari into pan after 20 minutes of mixture cooking and mix to coat. Now place lid on again, let cook 20 to 30 minutes. If you cook calamari too long it can become rubbery. This temp and time frame kept my calamari cooked yet firm. Delicious, serve hot with some fresh baked bread. Enjoy!!

Swordfish Salad

Preheat oven to 400*
Ingredients:
3 - 6oz swordfish, cut into 2" chunks
1 avocado, chopped
8oz mushrooms, rinsed, trim stems
1/3 cup lemon juice
handful sunflower seeds
Recipe Mix:

Olive oil spray your 8 x 8 baking dish. In large bowl mix all ingredients and scoop into baking dish. Bake covered with foil for 20 minutes, remove foil and bake another 10 minutes. Delicious, scoop mixture warm into lettuce cups.

SLOW COOKED MAHI MAHI
Ingredients:
28oz diced tomatoes, drained, rinsed well
3 - 6oz frozen mahi mahi
2 cups cottage cheese
1 Tbsp wasabi
1 tsp lemon pepper
1 tsp curry
Recipe Mix:
Olive oil spray your slow cooker and set to high. Place tomatoes on bottom then fish on top of tomatoes. In a bowl mix the next 4 ingredients and evenly top mahi pieces with mixture. Place lid on top of slow cooker and cook on high for 1 hour, lower to low and cook 5 hours. Delicious!!

Clam Spinach Bake
Preheat oven to 375*
Ingredients:
2 - 10oz frozen spinach, thawed, rinsed, squeezed dry
1/2 cup sunflower seeds
pepper
1 cup cottage cheese, fat-free
1/2 cup onion, chopped
2 - 6.5oz can chopped clams, drain, rinse well
Recipe Mix:
Olive oil spray your 8 x 8 baking dish, place spinach on bottom, now drizzle the sunflower seeds evenly over spinach, then pepper lightly. In a small bowl combine cottage cheese, onion and clams, mix well and evenly spoon over spinach/sunflower seeds. Bake uncovered for 50 minutes, a delicious little dish!!

Tuna / Clam Stuffed Tomatoes

Ingredients:
4 large tomatoes
2 - 6oz chopped clams, drained, rinsed
5oz Tuna, chopped, rinsed well

1 small can chilies, rinsed, drained, optional

Recipe Mix:
Olive oil spray your baking dish, scoop pulp out of tomatoes, save pulp for another recipe. Mix the clams, tun, cottage cheese and chilies in a large bowl, pepper to taste. Spoon mixture evenly tomatoes. Bake for 40 - 45 minutes, DELICIOUS!!

Baked Apples Stuffed With Tuna Salad, low fat * low carb
Preheat oven to 350*
Ingredients:
5 large apples, or pearsSurprised
2 - 6.4oz tuna, rinsed
1 cup onion, chopped
1 cup celery, chopped
2 Tbsp light mayonnaise
3/4 cup fat free cottage cheese
pepper to your desire
1 Tbs balsamic vinegar

Recipe Mix:

Hollow out the center of apples, discard stem/seeds, save the apple pieces. Olive oil spray your baking dish and set your hollowed out apples on the bottom. Mix up the tuna salad, except the balsamic vinegar and stuff each apple evenly. Mix the apple pieces and balsamic vinegar with any extra tuna mix and top apples. Bake uncovered for 40 minutes. REALLY DELICIOUS!!

Shrimp & Sausage Gumbo, with clams

Ingredients:
1 cup onions, chopped
olive oil
2 cups celery
3 Tbsp garlic, chopped
4 - 10oz clams, chopped or whole

32oz shrimp, thawed

8oz clam juice
2 cups water
2 Tbsp parsley

Shakes of hot sauce, optional
Recipe Mix:
Olive oil spray your frying pan medium/high. Place your onions in pan, drizzle lightly with olive oil, then add celery, saute for several minutes, then add garlic, saute 5 minutes. Olive oil spray a cooking pot and place clams inside, set burner to medium/high. Now scoop mixture from pan into pot and add your sausage and shrimp, mix well, then add tomatoes. Next, add your water and spices, mix well. Bring to a boil and then turn heat to low and simmer for an hour. This will be DEVOURED!

Ingredients:
3 cups crab, chopped
2 - 8oz mushrooms, stems removed, rinsed

1 Tbsp parsley

ZUCCHINI CRAB BAKE
Preheat oven to 350*
Ingredients:
2 - 8oz crab, rinsed, drained
4 zucchini, peeled, sliced
1 1/2 onions, sliced
2 Tbsp flax seed
pepper

2 green tomatoes, pureed
2 Tbsp garlic, chopped
1 Tbsp oregano
1 Tbsp basil
1 Tbsp lemon juice
1/3 cup white wine

10 cherry tomatoes, sliced
Recipe Mix:
Olive oil spray your baking dish, lay your zucchini slices on bottom. Now lay your crab on top of zucchini, then place onions on top of crab. Sprinkle flaxseed evenly over mixture. Pepper mixture in pan til your desire. Now mix your green tomatoes, garlic, basil, lemon and 1/3 cup white wine in a bowl then evenly pour over mixture. Then finally place your tomato slice on top. Bake for 50 minutes. Delicious!!

Avocado Shrimp Stew
Ingredients:
8 oz mushrooms, rinsed, chopped
1 - 28oz cans diced tomatoes, rinsed, drained
2 avocados, mash pulp
1 Tbsp cilantro
2 tsp tumeric

4oz sliced water chestnuts, rinsed, drained
4oz bamboo shoots, rinsed, drained
2 cups shrimp, rinsed
1 Tbsp garlic, chopped
1/2 cup water

Olive oil spray crock-pot, set to high. Place the first 3 ingredients in crock-pot in order listed, sprinkle the spices evenly across the mixture. Now place the chestnuts and shoots on top of the spices. Put lid on and let cook 4 hours. Near the end of cooking time of crock-pot, olive oil spray a frying pan and place water and garlic in next along with shrimp, bring to slight boil, turn to low and let simmer 10 minutes. Then add to crock-pot, mix well and serve!!

Wok Seasoned Shrimp Tacos in Lettuce Wraps
Ingredients:
2 Tbsp garlic, chopped
1/3 cup chilies, rinsed and drained
1 cup whole chestnuts, rinsed and draine

Heat your wok at 4 for two minutes, spray with olive oil. Now saute your garlic for 1/2 minute while mixing with wooden spoon. Now add the rest of the ingredients in order listed and stir to mix after each one. Now turn your setting to the lowest and add shrimp, mix well to coat with seasonings and juice. Put lid on top and simmer for 8 minutes, turn off and stir well and let sit in heated wok for 10 minutes before serving. I serve this with brown rice and lettuce cups. Enjoy!!

Tuna Vegetable Slow Cooker Casserole

Ingredients:
2 zucchini, peeled & sliced
3 small yellow squash, peeled & sliced
3 - 6.4oz white tuna, rinsed & drained

2 large onions, sliced
2 large tomatoes, sliced
2 Tbsp parsley

2 Tbsp chia seeds
4 cups water

Recipe Mix:
Olive oil spray your crock-pot and place your zucchini on bottom, then your yellow squash. Next place your tuna evenly over squash, then pepper to your desire, I do several twists with my pepper mill. Now place your onions over the mix evenly then your tomatoes. Now pour two cups of water over tomatoes. Evenly shake the parsley, basil and chives over the mixture and your chia seeds, then pour two more cups of water over seasonings. Set crock-pot on low, cook 4 to 6 hours, DELICIOUS!!

4 large green peppers, sliced in half, rinsed, seeds and stem removed
2 large sliced tomatoes, halved

1 cup water or use clam juice from cans

Olive oil spray your baking dish and place peppers on bottom. Drizzle each lightly with olive oil then place 2 pieces of tomatoes into each green pepper. Now evenly spread the clams into the peppers, then the artichokes. Sprinkle a little caraway seed over artichokes. Now place the water chestnuts evenly on top of the artichokes, then sprinkle a little dill weed over each pepper Now pour a little bit of water into the bottom of the pan, just to cover bottom (or use the clam juice). Pepper to your desire and bake for 50 minutes til a bit golden on top. Simply Delicious!!

Crock-pot Manhattan Clam Healthy Recipe Chowder

Ingredients:
5 - 6 oz cans of chopped clams in juice
8 celery stalks, rinsed and chopped
2 large onions, chopped

2 - 28oz diced tomatoes, rinsed and drained
2 Tbsp garlic, chopped
2 Tbsp thyme

1 Tbsp parsley
2 3/4 cups water
bottle of clam juice, optional
1 cup red wine, optional
Recipe Mix:

Turn your crock-pot on high. Olive oil spray your crock-pot. Place all ingredients into crockpot, stir well. Make sure you add enough water to cover the mixture. I usually only need 2 3/4 cups of water for my size crock-pot. Put lid on and turn to low and cook 8 hours. Optional for more of a clam taste add a bottle of clam juice and for a sweeter taste, add a cup of red wine. Serve with pepper and hot sauce. Enjoy!

Baked Crab Zucchini Boats
Ingredients:
4 zucchini, washed and slice in half
12oz flake crab, rinsed, squeezed
1 cup onion chop
1 cup fat free cottage cheese
1/2 cup egg beaters
1/4 cup avocado

1 Tsp lemon juice

1Tbsp Mrs. Dash original blend, original
pepper to your desire
Recipe Mix:
Boil a big pot of water. Remove from burner and drop sliced zucchinis into water, let sit in water 3 to 4 minutes. Drain, and let zucchinis cool for a few minutes. Next, carefully scoop out the middle of zucchini (save that for a bread). Now you have your boats, put them in an olive oil sprayed baking dish. In a bowl mix all your ingredients and once mixed nicely, scoop evenly into your boats. Bake for 30 to 40 minutes in oven, til golden on top. Enjoy!!

Lobster & Artichoke Souffle

Ingredients:
8oz chopped lobster, rinsed, drained
12oz artichokes, rinsed, drained
1/2 cup egg substitute
1/2 tsp thyme

1 tsp lemon juice

Recipe Mix:
Olive oil spray a frying pan. Over medium heat saute garlic, artichokes, lobster, thyme and oregano. Sprinkle a little cayenne over mixture, then add paprika. Now olive oil spray your 6 ramekins and set on a cookie sheet, while mix sautes. Empty frying pan mixture into a large bowl and add egg. Then add lemon juice and pepper to your desire. Now evenly pour mix into ramekins and bake for 30 minutes or until golden on top. Enjoy!!

Tuna Veggie Pie with Bean Crust
Preheat oven to 400*
Ingredients:
2 cans black beans, rinsed and drained
1 large onion, chopped
1 small zucchini, chopped
8 oz mushrooms, washed & chopped
1 Tsp dill
1 Tbsp parsley
1 tsp thyme
1/2 tsp pepper
2 cups egg substitute
1 cup fat free milk
1/2 cup reduced fat feta cheese, grated
1 cup thawed frozen spinach, squeezed
2 - 5oz water packed tuna packets
4 slices of tomatoes, 1" each
Recipe Mix:
Olive oil spray a deep dish 9" pie baking dish. Mix beans with 1/4 cup of eggs and mash.
Now press the beans down like a pie crust into pie dish, bake at 400* for 10 minutes. Once done baking, turn oven down to 375* and remove pie dish from oven. Let cool while you saute onion, zucchini and mushrooms in olive oil sprayed frying pan on medium high heat for 5 minutes. Add all spices and turn to low heat setting and saute for 5 more minutes, mix well. In large bowl mix 1 1/2 cup of eggs, milk, feta, spinach and tuna. Add veggie mix to the egg mix, mix well and pour over the bean crust. Now place 4 tomatoes on top. Bake 50 minutes or until golden on top. Also, I usually have a bit of mix left and use in the morning, just add a bit more egg substitute and serve for breakfast with some fruit. Thank You for visiting my site!!

Seafood Soup Crab & Clam Stew
Ingredients:
Olive oil pam spray
2 cups of chopped onion
2 Tbsp garlic/heaping
2 cups diced tomatoes, rinsed & drained
2 cups water
2 Tbsp basil
pepper
2 - 6.5oz chopped clams in juice
2 cups chopped celery
1 cup milk
14 oz crab-meat
Recipe Mix:
Olive oil spray a large frying pan, and place over med high heat. Next, add your onions, garlic, tomatoes, water and basil to the pan, stirring gently to mix. Now pepper the mix lightly, and add your clams with juice, celery, milk and crab-meat to pan. Make sure you mix nicely to combine all ingredients. Turn heat to medium and let it simmer for 45 minutes. You can also put on low and simmer for an hour. If you want a bit more spice, add 1 more Tbsp of basil. Pepper your own serving to taste. Enjoy!!

**you will want to pepper more if you like it a bit spicier, my hubby likes it next day even more with a dash of hot sauce..yum**

Grilled Tilipia
Charcoal Grill
Ingredients:
6-8x8 pieces of foil
6-4oz Tilipia, thawed
6 tsp chopped garlic
8oz slice mushrooms
1 chopped large red onion
1/2 cup lemon juice
pepper
Recipe Mix:
Olive oil pam spray the pieces of foil and place a piece of Tilipia on each. Spread a tsp. of garlic onto each piece. Rinse the mushrooms under cool water and place into a olive oil sprayed frying pan. Saute the mushrooms for 5 mins. over med/high heat, this will give you about 2 Tbsp. of juice on the bottom of the pan (save the juice). Next, evenly spread the mushrooms over the pieces of Tilipia and then evenly spread the onion. Lightly sprinkle lemon juice over each piece of Tilipia. Then take the mushroom juice from the pan and pour just a bit on top of each piece, lightly sprinkle with pepper. Now gently close each piece of foil, be sure to seal good, you will be flipping on grill. Grill each side for 8 minutes over direct heat. Enjoy!

Jumbo Grilled Butterfly Shrimp
Grill / Charcoal
Ingredients:
2 lbs butterfly jumbo shrimp/frozen
lemon garlic marinade 12oz
Recipe Mix:
Pour the marinade over the frozen shrimp in a baking dish and thaw in fridge, toss every so often. Once thawed, grill for 12 to 14 minutes over indirect heat, then over direct heat 1 minute each side to sear. My Hubby's easy shrimp dish :)

Shrimp Stir-fry
Ingredients:
2 lbs raw frozen shrimp
8 oz mushrooms
2 banana peppers
1 chopped white onion
2 bottles lemon/garlic marinade
olive spray
1 Tbsp crushed red pepper
Recipe Mix:
Place the frozen shrimp, mushrooms, peppers, onion and marinade into a large bowl, mix well..let thaw in fridge.
Olive oil spray your wok, heat up. Once wok is hot, pour entire bowl, including the juice into wok. Sprinkle red pepper over stir-fry.
Let cook for about 15 minutes. Then drain all the liquid, reserving the mix of shrimp and veggies. Serve with brown rice. Hubby made this for dinner!

Note** Take any leftovers and mix with 1 cup of lite sour cream and bake in small, olive oil sprayed baking dish for 30 minutes at 400*, til bubbly. For an extra splurge, add any leftover cheese (I used pepper jack)  you might have in fridge!! Serve with celery...delicious!!
