Eggs Baked With Basil & Greens
Preheat oven to 350^
Ingredients:
3 cups egg beaters, or 12 whole eggs
1 large bunch of greens, rinsed, chopped, pat dry
1 bunch green onions, rinsed, chopped, pat dry
8 basil leaves, rinsed, chopped, pat dry
3 jalapenos, chopped, optional
Recipe Mix:
Olive oil spray your baking dish. In a large bowl, mix all ingredients together and cover with foil. Bake for 1 hour. DELICIOUS!!

 Slow-Cooked Artichoke Stew
Set your crock-pot to high.
Ingredients:
3 cups artichokes, rinsed, chopped ( I use marinated artichokes, rinse well!!)
1 cup shallots, chopped
10oz frozen chopped spinach, thawed, rinsed well, squeeze excess water
3 Tbsp garlic, chopped
2 1/2 cups water
1 Tbsp Mrs. Dash lemon/herb
1/4 tsp pepper
Recipe Mix:
Place all ingredients into your crock-pot, cook on high for 1 1/2 hours, turn to low and cook for 4 hours. If you cook while at work, cook on low for 7 hours. Serve with cracked pepper and crushed red pepper. A delicious pickled taste stew, YUM!

Baked Swai With Avocado / Sun-Dried Tomato
Preheat oven to 350*
Ingredients:
3 - 4 pieces of your favorite fish, I used Swai for this recipe
1/2 avocado, mashed
2 Tbsp garlic
3/4 cup sun-dried tomatoes

Recipe Mix:
Olive oil spray your baking dish. Rinse your thawed fish under cold water, pat dry. Lay pieces of fish on bottom of baking dish. In a small bowl combine the avocado with garlic, then evenly spread over your pieces of fish. Now top with sun-dried tomatoes and pepper lightly. Cover with foil and bake for 50 minutes. DELICIOUS!!

Spicy Baked Garbanzo Beans
Preheat oven to 325*
Ingredients:
2 - 15.5oz garbanzo beans, or another type, drain, rinse well
1 Tbsp..
wasabi mustard
1/4 tsp cayenne powder
1 cup sunflower seeds
pepper, add to your desire
Recipe Mix:
Once you rinse your beans, let them air dry for an hour. Line two baking sheets with baking paper and olive oil spray. In a large bowl mix all the ingredients and evenly spread / space out coated beans onto your baking sheets. Bake 51 minutes or to your desire of crisp!!

Baked Zucchini/Avocado With Fresh Basil
Preheat Oven To 350*
Ingredients:
2 1/2 cups peeled / sliced zucchini
1/2 prosciutto
2Tbs reduce fat feta
4 basil leaves, diced
1 cup roasted red peppers, rinsed well, chopped
1 avocado, peeled, chopped
pepper to your desire
Recipe Mix:
Olive oil spray your baking dish. Now mix all well ingredients in a large bowl with hands. Scoop into your baking dish and bake for 51 minutes. Delicious!!

Corn Beef Brisket
Preheat oven to 350*
Ingredients:
4lb corn beef brisket, trim any fat that is wrapped around the perimeter of the meat
1 cheated on this recipe, I used the seasoning packet that came with the brisket
olive oil spray
1 cup water
Recipe Mix:
Line your baking pan with foil and olive oil spray. Pour one cup of water onto bottom of foil/pan. Rinse brisket under cold water and place fat side up. Rub the season packet all over the top of brisket. Bake 2 1/2 hours, flip, bake another 2 1/2 hours. DELICIOUS!!

Tuna Veggie Bake
Preheat oven to 350*
Ingredients:
4 cubanelle peppers, rinse, remove stem/seeds, chop to the size you like
3/4 cup onions, chopped
2 large tomatoes, chopped
1/2 cup reduce fat feta cheese
6 oz water packed white tuna, rinse really well / squeeze
olive oil
Recipe Mix:
Olive oil spray your baking dish. Mix up the peppers, onions and tomatoes in the baking dish. Now layer the cheese, then the tuna evenly over the pepper/onion/tomato mix. Next pepper to your desire, now drizzle lightly with olive oil. Cover with foil and bake for 50 minutes. DELICIOUS!!

Delicious Diet Asparagus Soup
Ingredients:
1 cup onions, chopped
2 cups of tomatoes, chopped
2 Tbsp basil, fresh chopped
pepper

6 cups of asparagus, chopped finely (2 stalks, trim ends, rinse well)
1/2 romano cheese, grated, or any cheese you have to use up
1 cup water
Recipe Mix:
Set your burner to medium high and olive oil spray your frying pan. Now place your onions into pan and sauté a few minutes, then add tomatoes. Now add basil, pepper lightly then add asparagus, mix. Add your cheese, then water, mix well. Bring to boil, then turn to low and simmer for an hour with the lid on. Serve with a dollop of fat-free sour cream, along with pepper and crushed red pepper. Delicious, my hubby loves this soup!!

A Delicious Chili Recipe
Ingredients:
14oz Lightlife Lean Ground Beef Style Veggie Protein
1 large onion, chopped
3 Tbsp garlic, chopped
1 Tbsp Mrs. Dash original
1/4 tsp cumin
1/4 tsp cayenne
2 - 28ox diced tomatoes, drain, rinse well
2 cups water
Pepper
15oz can black beans, optional, just be sure to drain and rinse well!!
 
Recipe Mix:

Olive oil spray a frying pan, set burner to medium / high heat and saute the ground beef style veggie til it starts to brown slightly. Next add the onion and garlic and saute for 5 minutes while stirring to mix with veggie beef. Then add the remaining ingredients and pepper lightly. Turn burner to low and simmer for an hour with lid on. This came out delicious, even better the next day!!

My Veggie Sushi
Ingredients:
1 medium avocado, peeled, remove seed
1 cup tomato, chopped
1/2 cup onion, chopped
1/2 cup celery, chopped
4 cucumbers, peeled
Recipe Mix:
Mix all ingredients by hand in large bowl, mush well. Slice cucumbers into 2" slices, hollow out seeds to form cup. Stuff with mixture and serve with wasabi and ginger. YUM!!

Pecan Oat Bread
Preheat oven to 350*
Ingredients:
4 cups oats
2 1/4 cups of hot water
4 small apples, peeled chopped, I chopped my apples big
3/4 pecan pcs
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in a large bowl, should be sticky. Now scoop into greased loaf pan. Bake 51 minutes, remove from oven and cover with foil, bake another 15 minutes. Delicious!!

Vegetarian Stuffed Green Peppers
Preheat oven to 350*
Ingredients:

4 large peppers, stems removed, scoop seeds out
8oz alfalfa spouts, rinse, squeeze excess water
3/4 cup sunflower seeds
2 cups green onions chopped
 1/2 cup feta, reduced-fat
12 cherry tomoates
pepper
olive oil
Recipe Mix:
Olive oil spray your loaf pan. Now scoop al ingredients into a large bowl, mix well by hand. Now evenly spread mixture into peppers. Bake 50 minutes, yum!!

 My Lobster Sushi
Ingredients:
8oz imitation crab, rinsed well, chopped
3/4 cup onion, chopped
1/2 fat-free cottage cheese
1 cup celery, rinsed, chopped finely
pepper
4 cucumbers, peeled, 2 inch slices, hollow out center
wasabi
peeled ginger

Recipe Mix:
Mix the first 4 ingredients in a large bowl, then pepper to taste. Serve with wasabi and ginger. Deliciously healthy!!

Turkey Zucchini Lasagna
Preheat oven to 350*
Ingredients:
2 medium zucchinis, peeled, shredded
2 Tbsp. olive oil
2 large chopped onions
3 Tbsp chopped garlic
1 lb ground Turkey, cooked (or beans for all veggie)
1 Tbsp oregano
1 Tbsp pepper
1 Tbsp parsley
1 Tbsp basil
1 28z crushed tomatoes
1 15oz fat free ricotta cheese
2 avocados, peel/seed removed
1/4 cup egg substitute
Recipe Mix:
Saute onion & garlic in olive oil for 5 minutes on medium heat, then add the turkey. Now add all your spices and crushed tomatoes, stir to mix well and turn heat to low, simmer 10 minutes. While meat mix is simmering, mix ricotta cheese and avocado until creamy (I use my hands to blend this, so no chunks of avocado). Olive oil spray a 13 x 9 baking dish and place the zucchini on the bottom of baking dish. Layer the meat mixture evenly over the zucchini, and follow up with the cheese/avocado mix spread evenly over the meat mixture. Bake for 40-50 minutes! DeliciousTongue out

 Crock-Pot Diet Soup
Ingredients:
28oz diced tomatoes, drained, rinsed well
1 cup celery, chopped
10oz frozen spinach, thawed, rinsed, squeeze dry
1 bunch green onions, ends trimmed, rinsed, chopped
1 cup hot peppers
1/2 tsp pepper
Recipe Mix:
Olive oil spray your crock-pot, set heat to high while you get all your ingredients ready. Place all ingredients in order listed into crock-pot, gently mix, and turn heat setting to low. Place lid on top and cook for 5 hours, let sit for a bit before serving. This came out really delicious, I didn't need to season my bowlful at all.

Delicious Bean Salsa Dip

15.5 oz black beans, drain, rinse well
1 cup salsa, your choice, I use hot
1/2 cup onion
1/2 tsp cumin
1 cup hot peppers, drain, rinse
Recipe Mix:
Place all ingredients in your food processor and pulse to your desire of smoothness. Or just mush it all together with your hands. DELICIOUS!! Serve with celery and carrots!!

Yummy Hummus
Ingredients:
2 - 15.5oz garbanzo beans, drained, rinsed well
1 Tbsp lemon juice
1 Tbsp garlic, chopped
1 tsp cumin
pepper to taste
Recipe Mix:
In food processor, pulse all ingredients to your desire of smoothness. Chill for at least 2 hours! Serve with carrots and some chopped celery!

Broccoli Sauteed In Red Wine Low Fat Delicious

Ingredients:
2 heads of broccoli, stems removed, trimmed
1 cup red wine
4oz pimentos, drained, rinsed
1 Tbsp garlic, chopped
1/2 tsp wasabi powder
1/2 tsp oregano
pepper
1 cup fat-free cottage cheese
Recipe Mix:
Olive oil spray your frying pan and set over high heat. Pour your wine into pan and bring to a slight boil. Now add your broccoli, mix to coat. Once starts to boil turn to medium/high heat. Add your pimentos then your spice, pepper to your desire. Mix dish well to coat broccoli. Add 1 cup of pineapple. Mix it up and pepper more if you with. Now add your cottage cheese, mix well. Place lid on top and turn it down to simmer for 20 minutes.

 Mexican Eggplant
Preheat oven to 350*
Ingredients:
1 large eggplant, peeled, 1" slices, should give you around 8 pieces, different sizes
3 Tbsp garlic, chopped
1 large onion, chopped
28oz can diced tomatoes, drained, rinsed well
15.5oz black beans, drained, rinsed well
4.25oz chilies, drained, rinsed well
1 Tbsp Mrs. Dash original
2 tsp dill
pepper
Recipe Mix:
Olive oil spray your frying pan and set your burner to med/high heat. Place your onions and garlic in pan and stir often, let saute for 5 minutes. Place your sliced eggplant into a 15 x 9 olive oil sprayed baking pan. Now that your
onions and garlic are smelling good, add the remaining ingredients, mix well. Put lid on top and turn burner to low, let simmer 20 minutes. Evenly scoop pan mix on top of eggplants. Bake 41 minutes. Delicious!!

Healthy Egg Salad
Ingredients:
dozen hard boiled eggs, cold
1 small red onion, chopped
1 cup celery, chopped
1 avocado, peeled, chopped
1 cup fat free cottage cheese
1/2 tsp dry mustard
2 tsp wasabi powder, optional
pepper
head iceberg lettuce

Recipe Mix:
In large bowl mix all ingredients to blend well, pepper to taste. Serve in lettuce cups. Great vegetable recipe with protein! Enjoy!!
NOTE** you an use any type of spice, just season slowly. Or use up any mustard you have on hand, just eliminate the dry mustard.

 Celery Onion Soup, no sodium filled broth
Set burner to medium high
Ingredients:
4 cups onion, chopped
3 - 4 basil leaves, chopped
pepper
2 cups celery, pureed
1 tsp oregano
olive oil
2 cups water
Crushed red pepper, optional
Recipe Mix:
Olive oil spray your frying pan. Place onions in frying pan and let saute for several minutes. Now add your basil leaves and mix into onions. Pepper to your desire, then add celery, mix well. Now sprinkle your oregano over mix then drizzle some olive oil over mix. Now pour water in and add crushed red pepper, optional. Mix well and place lid on top. Set burner to low, let simmer for an hour and mix every 10 minutes. Enjoy!!

Stuffed Baby Portobello Mushrooms
Preheat oven to 350*
Ingredients:
10oz Portobello mushrooms, rinsed, stems sliced off
3 Tbsp prosciutto
3/4 cup reduced fat feta
1 pint cherry tomatoes, rinsed
2 Tbsp basil
Recipe Mix:
Olive oil spray a pie plate and place mushrooms on bottom, hollow end up. Evenly stuff your prosciutto into your mushrooms. Next evenly stuff your mushrooms with feta, then top each with a cherry tomato. Sprinkle some basil over mushrooms. Bake 40 to 50 minutes. DELICIOUS!!

 FISH TACOS
Preheat oven 450*
Ingredients:
6 tilapia fillet's
Lettuce cups or wheat tortillas
1 cup onion, chopped
1 avocado, chopped
1 large tomato, chopped
Wasabi mustard
Recipe Mix:
Bake thawed tilapia fillets on greased cookie sheet for 18 minutes, flip at 12 minutes. Once fish is done, place one filet on either a tortilla or a lettuce cup, top with onion, avocado, tomato and a bit of wasabi mustard. I eat my fillet on salad. DELICIOUS!!

Slow Cooked Chicken:
Olive oil spray your crock-pot, heat setting on low. Throw chicken in, add 1 cup of water and  any seasonings you want and cook for 8 hours. Make sandwiches, salad or just eat as a snack throughout the day. You can enjoy healthy food without all the fat!

 Skinnier Baked Potato Skins
Preheat Oven/Broil
Ingredients:
4 large baking potatoes
Olive oil spray
1 cup skim cheese
8 slices cooked turkey bacon, less fat/less sodium brand, chopped..I bake my bacon in the oven at 350 for around 14 minutes.
1 cup sour cream, light or fat free
1 avocado, chopped
Recipe Mix:
Rinse the potatoes, pat dry, place in preheat oven / 350, right onto rack, third row. Bake for one hour, should be soft to touch. Remove, slice each potato down middle, let cool 11 minutes. Set oven to broil. Gently scoop as much of the potato out of the skin when still warm, save potatoes for another recipe. I puree mine and always give to my Dad. Generously spray each potato / skin side with olive oil. Place cut side on lined baking tray. Bake for 5 to 8 minutes, watch to your desire crispiness, you might want to rotate the tray to even the bake :). Once desired crispiness is achieved, flip over and evenly divide the cheese you like, SKIM! Bake for another 5 minutes. Serve with sour cream and avocado. DELICIOUS!!

Brussels Sprout Chicken Salad

Ingredients:
4 hard boiled eggs
2 large cooked chicken breasts, chopped
2 tomatoes, chopped
15oz can black beans, rinsed well, drain
6oz water chestnuts, rinsed, drain, chop
2 cups onion, chopped
1 avocado, chopped
1 tsp cayenne, optional
1 tsp Mrs. Dash, original
1 cup cottage cheese, fat-free
lettuce cups
Recipe Mix:
In large bowl mix all ingredients and scoop into lettuce cup. Don't put to much into your lettuce cup so you can enjoy 2 servings, and use several lettuce leaves to make a cup, more filling. Enjoy!!
