I am a woman who loves chocolate. Here I am with my 50 pound chocolate
birthday bunny from my hubby. Nothing better than biting into bunny ears! Believe me, if I could live on
chocolate and stay in shape I would; but it is my choice on what I put into my body.
As a matter of fact, this year I am
eating only dark chocolate. Please do check this
page often, I have been told that I should open a bakery! And my family loves the must have special ingredient in all of
my baking: LOVE!!
Yogurt Almond Bread
Preheat oven to 350*
Ingredients:
3 cups oats
1 1/4 cups garbanzo bean flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 cup fat-free vanilla yogurt
2 cups hot water
1 Tbs almond flavor
Recipe Mix:
Olive oil spray your loaf pan. Next, in a large bowl, mix all ingredients in order listed, mix well after each. Now
scoop batter into your loaf pan. Bake 51 minutes, cover with foil and bake another 15 minutes.

Oat Truffle Dessert
Preheat oven to 350*
Ingredients:
5 cups oats
1 tsp baking
soda
1 tso baking powder
1 1/2 tsp cinnamon
16oz unsweetened applesauce
1 cup chopped walnuts
1lb
natural dusted cocoa powder truffles
Recipe Mix:
Olive oil spray your 13 x 9 glass baking dish. In a large bowl mix all ingredients except
truffles. Once you have the ingredients mixed well, add truffles except 1 cup. Scoop the mixture into your baking dish, now
press the truffles evenly across the top of the mixture in the baking dish. Bake for 41 minutes, leave in oven once timer
goes off, do not open door, let remain in oven for another 10 minutes. I can't stop eating this, my Hubby put a dollop of
yogurt fat-free on top, he loved it!! And our little guy loved it as is, DELICIOUS!! This makes quite a bit, so if your not
feeding a crowd, cut recipe in half. Use any chocolate you might have on hand, great treat, minus the extra butter and no
white flour!!

Perfect Comfort Food Apple Recipe
Preheat oven 350*
Ingredients:
6 apples, peeled, chopped
into large pieces
6 prunes, chopped
1 cup unsalted mixed nuts, I cracked all my holiday nuts I had to use up
2 cups oats
2 Tbsp raw honey
4oz applesauce
1 tsp cinnamon
Recipe
Mix:
Olive oil spray a 8 x 8 baking dish. In a large bowl mix oats, honey, applesauce and cinnamon, will be sticky.
Place nuts, figs and apples in baking dish, now evenly spread oat mixture as good as you can on top of apples. Bake 50 minutes,
delicious!!

FIGGY BREAD
Preheat oven to 350*
Ingredients:
4 1/2 cups oat flour
1 tsp baking powder
1 Tbsp almond flavor
1 1/2 cups to 2 cups
hot water, batter should be sticky but not dry once mixed
1 1/2 cups packaged organic figs,
I left mine whole
Recipe Mix:
Olive
oil spray your loaf pan and mix all ingredients in a large bowl. Scoop batter into pan and bake 40 minutes, cover with foil
and bake another 21 minutes. Delicious!!

Oat Peanut Butter Kiss Cookies
Preheat oven
to 350*
Ingredients:
4 cups oat flour,
I use oats & food processor
1 tsp baking soda
1 1/2 tsp baking powder
1/2 cup brown sugar
4oz apple
sauce
1 egg
1 cup peanut butter
36 Hershey Kisses
Recipe Mix:
Mix
all ingredients with hand mixer til blended. Wet hands and form 2" balls and place on cookie sheet lined with baking
paper. Bake 8 to 10 minutes til golden. Move fast and gently place a Hershey kiss into middle of each cookie. Makes approximately
32 cookies. Enjoy!!

Blueberry Donuts
Preheat oven to 350*
Ingredients:
1 1/4 cups all purpose flour
3/4 cup splenda
2 tsp baking powder
1 egg
8oz applesauce
1/3 cup skim milk
1 cup blueberries
Recipe Mix:
Olive oil your 8ct donut pan, mix ingredients in order listed. Now
scoop 2 Tbsps of batter into each donut hole. Bake 22 minutes. This should give your around 11 servings.

Gluten-Free Cranberry Cake
Preheat oven to 350*
Ingredients:
2 cups Bisquick
Gluten-Free Pancake mix
1 cup oats
1 1/4 tsp baking powder
1/2 cup walnuts, optional
1 1/2 cups vanilla
fat-free yogurt
1/2 cup egg beaters
1/2 cup hot water
2
tsp almond flavor
2 cups of fresh cranberries, rinsed well
Recipe Mix:
Olive oil spray a large brownie pan. Mix all ingredients in a large
bowl in order listed. This is a sweet bread with the cranberries, so use less or more, for your taste for sweetness. Bake
41 minutes til golden on top. Enjoy!!

Strawberry Yogurt Rye Bread
Preheat oven
to 350*
Ingredients:
4 cups rye flour
1 Tbsp baking powder
1 cup hot water
1 cup fat free
vanilla yogurt
1 Tbsp vanilla flavoring
1 1/4 tsp cinnamon
16oz strawberries, rinsed, stems removed

Mix:
Olive oil spray your loaf pan. Mix all ingredients except strawberries in large bowl, let sit 30 minutes. Now
add strawberries and scoop into your baking pan. Bake 46 minutes, then cover with foil and bake another 15 minutes. Very Moist
Delicious Bread!!

Just Too Good, APPLE BREAD
Preheat
oven to 350*
Ingredients:
3 cups of oats, pulsed into flour
1 cup rye flour
1 tsp baking
powder
2 1/2 cups hot water
1 Tbsp lemon flavor
3 cups chopped apples
cinnamon
Recipe Mix:
Olive oil spray your bread pan. Mix all ingredients in order listed, use your
hands to mix when you add the apples. Sprinkle with cinnamon, I use a lot!! Now scoop into pan, and bake 41 minutes. Remove
from oven, slice gently down middle 1/2" into loaf, place foil on top and bake another 21 minutes. Enjoy!

Delicious Healthy Apple Pie
Pie Crust
Ingredients:
2 cups oats/ crush up with your hands, do not turn into flour
8oz apple sauce
1 cup walnuts,
pieces
1/3 cup yogurt
Recipe Mix:
Mix all ingredients in a large bowl. Olive oil spray a 9" glass
pie dish. This will make a nice thick crust. Scoop mixture into pie dish and with your fingers spread evenly across bottom
and up sides. Now foil the perimeter of crust and then place into oven and bake for 41 minutes. Remove from oven, and while
crust is cooling, mix up your apple pie filling.
Pie Filling:
6 cups of baking apples, get them from
your local farmers market, now in season!!
1/3 cup honey
1 tsp cinnamon
honey
Recipe Mix:
In
large bowl mix your apples with the cinnamon. Now drizzle honey over your pie crust then scoop the apples on top. Then drizzle
with more honey. Bake 30 minutes, then just place a piece of foil on top to prevent burning, and bake another 21 minutes.
Serve warm or cool over night. This is an incredible delicious recipe!!

Some Healthier Brownies
Preheat oven to 350*
Ingredients:
4 cups oats
1 tsp baking soda
1/4 water
1/2 pureed fresh large prunes, remove seeds
4oz applesauce
1/2 egg beaters
2 cups chopped dark chocolate
Recipe Mix:
Mix first 6 ingredients
in a large bowl, then add chocolate. Olive spray a 9 x 9 brownie pan and scoop the mixture into pan. Bake 31 minutes.

1 cup spelt flour
1 tsp baking soda
1/4 cup brown sugar
1/4 cup egg beaters

1 cup peanut butter
Hershey Kisses, dark chocolate

Mix all ingredients
in a large bowl. Line a cookie sheet with baking paper and spray lightly with olive oil spray. Roll 2" balls and bake
10 - 12 minutes til golden. Place a Kiss in the middle carefully as soon as they come out of the oven. Nice recipe, without
all the fat from butter. Enjoy!

Good Way To Eat Dark Chocolate Cocoa Almonds
Preheat oven to 350*
Ingredients:
3 cups oat flour
1
cup rye flour
2 Tbsp flaxseed
1 1/2 tsp baking powder
2 cups of melon, pureed
Handful dark chocolate cocoa
roast almonds

Olive
oil spray your loaf pan. Mix all ingredients in a large bowl, except almonds. Now place almonds into the top of mixture, 1/2
way in. Bake 31 minutes, then cover with foil and cover 20 minutes. Delicious!

Breakfast Oat Pancakes
Ingredients:
2 cups
oats, pulsed into flour, food processor
1/2 cup oats
1/2 cup milk
2 Tbsp applesauce
2 tsp vanilla
Recipe Mix:
Mix all ingredients in a large bowl, mixture should be sticky, add a bit more oats or water
to set mix. Olive oil spray your frying pan and set to medium heat. This recipe should make 4 normal size pancakes. First
flip should be after 2 minutes, then flip every minute to not burn. Delicious, and just toast any extra pancakes and serve
with some honey our peanut butter at dinner!!
VERY BLUEBERRY MUFFINS
Preheat
oven to 375*
Ingredients:
4 cups oats, pureed into flour
1/2 tsp baking soda
1 3/4 cups
hot water
2 tsp almond flavor
2 cups blueberries, rinsed, drained
Recipe Mix:
Mix all ingredients
in order listed in large bowl. Scoop mixture evenly into a 12 count olive oil sprayed muffin baking pan. Bake 27 minutes.
Top with a bit of honey or peanut butter, YUM!

Betty Crocker Dark Choclate Fudge Brownie Mix, 19.9oz box
1/4 cup water,
1 Tbsp water
1/2 cup egg beaters
4oz applesauce
frosting,

Recipe Mix:
Olive oil spray your 9 x 9 pan. Mix all ingredients in a large
bowl, then pour into pan. Place pan in fridge covered for an hour. Preheat oven to 350*, bake brownies 29 minutes. I do let
my little guy eat some junk, Enjoy!!

Ingredients:
3 cups oats
3 1/2 cups garbanzo flour
1 1/2 tsp baking soda
1 1/2 cups hot
water
4oz applesauce

1 pint raspberries, rinsed, broken into pieces
8oz mandarin
oranges, rinsed
1 1/2 Tbsp almond flavor
Recipe Mix:
In large bowl mix all ingredients thoroughly in
order listed. Now scoop into 2 olive oil sprayed bread pans. Bake 41 minutes, then remove and cover with foil, bake another
6 minutes. I serve this with raw honey and peanut butter. **Note, be sure when you olive oil spray the bottom of your baking
pans you only spray the bottom, not the sides.

Banana Pudding Cake
Preheat oven to 350*
Ingredients:
1 cup of oats
1 cup whole wheat flour
1 1/4 tsp baking soda
8oz apple sauce
1/3
splenda
3/4 cup egg substitute
1 tsp vanilla
5 bananas
Recipe Mix:
Place all ingredients into
a large bowl and mix with hand held mixer at high speed for 2 minutes, then add bananas and mix 1 more minute. Batter should
be nice and creamy. Pour into a 9 x 9 baking dish, olive oil spray the bottom.
Topping Ingredients:
1 cup
oats
4oz applesauce
3/4 chopped walnuts
Mix ingredients in a bowl with a spoon, now evenly drop mix on top
of batter. Bake for 40 minutes, then cover with foil and bake another 12 minutes. If you prefer more of a cake like texture,
use only 1 cup of bananas, not 5 bananas. Enjoy!!

add a bit more oat flour. Enjoy!!

1 Tbsp vanilla
1 cup blueberries, rinsed

Mix dry ingredients then add the remaining ingredients,
mix well. Next olive oil spray a 12 count muffin pan, and evenly scoop batter into cups. Bake for 20 mins. then open oven
and rotate pan, so front muffins are in back, and back in front. Now bake another 10 mins. until golden. Delicious

Raisin Bran Puffs
Preheat oven to 350*
Ingredients:
1 cup soy flour
1 1/2 cups raisn bran (I used FiberOne)
1 cup egg substitute
4oz
applesauce
2 tsp almond extract
1/2 tsp baking powder
1 tsp cinnamon
Recipe Mix:
Mix all ingredients together. Pour into an olive oil sprayed 12 count
muffin pan. Bake for 18 minutes, til golden.

Oatcakes
Ingredients:
2/3
cup oats
1 large egg
1/4 tsp baking powder
1/2 tsp vanilla
pinch of cinnamon
Recipe Mix:
Mix
all ingredients together. You can add fruit or nuts, be open minded. The egg and oats will be your base, add whatever you
have healthy. If batter isn't quite thick enough, add more oats slowly. Preheat your olive oil sprayed frying pan on medium
high. Pour batter, I make one big oatcake with this recipe, into pan. Turn heat down to medium low, give it a few minutes
and flip. Keep flipping til desired brownness. Enjoy!

Plum Soy Dessert Muffins
Preheat oven to 350*
Makes 12 muffins
Ingredients:
1 cup oats
1 cup milk
1 cup soy flour
1 tsp baking powder
1 tsp baking soda
1/4 cup egg substitute
4oz applesauce
1/2 tsp almond extract
1 tsp cinnamon
1 tsp ginger
12 dried plums
Recipe Mix:
Mix the milk and the oats, let sit for
10 minutes. Once the oats and milk have mixed, add the rest of the ingredients, mix well. Evenly scoop batter into a 12 count
olive oil sprayed muffin pan. Now press 1 plum into the center of each muffin cup. Bake 18 - 20 minutes or until golden.

A Healthier Peanut Butter Cookie
Preheat oven to 350*
Ingredients:
4 1/4 cups quick cooking oats
2 tsp baking
soda
1 Tbsp vanilla
3 large eggs
4oz applesauce, unsweetened
1/2 cup splenda
1/2 brown sugar
2
cups creamy peanut butter
1 cup chopped up milk chocolate (regular candy bar)
Recipe Mix: Makes 36 cookies
Put all ingredients into a large bowl,
except chocolate. Mix thoroughly by hand or use an electric mixer. Then once mixed completely, add chocolate. Lightly olive
oil spray a baking sheet, then wipe off excess. Form cookie dough into golf ball size balls and place on cookie sheet, now
press down lightly with hand to flatten a bit. Bake 11 - 13 minutes, til golden on top. A good way to omit white flour in
peanut butter cookies, a bit of a drier cookie texture, but delicious!!

Oat Cakes
Ingredients:
2 1/2 cups of oats
1 1/4 cup egg substitute
4 tsp vanilla
Recipe
Mix:
Mix all three ingredients in bowl. Olive oil spray your griddle, or frying pan. Set at medium heat. Pour batter
into pan til desired size cake, I get 7 nice cakes out of this mix. Watch closely and flip after 1 minute, keep flipping every
couple minutes til golden on each side, they cook fast. Very delicious, I eat mine with a bit of Nutella for a treat or a
bit of honey. I cooked mine in a heart shaped metal baking frame in a frying pan. Enjoy!

Preheat oven to 400*
12 Muffins
Ingredients:
2 cups oats
1/2 cup
yogurt, fat free vanilla
1/2 cup milk, no fat
1 - 4oz applesauce
1/4 cup egg beaters
1 1/2 cups garbanzo/fava flour
1/2
tsp cinnamon
1/2 tsp nutmeg
2 tsp baking powder
1 tsp baking soda
handful cranberries (optional)
Recipe
Mix:Olive oil spray a 12 count muffin baking dish. Mix all ingredients and spoon evenly into each muffin cup. Bake for
15 minutes or until golden brown. I serve these with a teaspoon of peanut butter, honey or nutella at dinner time. Enjoy!!

Healthy Banana Muffins
Preheat oven to 325*
12 muffins
Ingredients:
1 3/4 cups whole wheat flour
1 tsp baking soda
1/3 cup flaxseed
1/4 tsp cinnamon
1/3 cup olive oil
1/2 honey
1/2 cup egg substitute
1/4 hot water
Nutella (optional)
Recipe Mix:
Mix all the ingredients in the order
listed, except bananas. If you find the dough is a bit dry, just add a few tablespoons of water at a time, until dough is
all mixed. Now add the 3 bananas by hand, be sure to mix well, so no lumps. Now fill half a muffin cup in baking cupcake pan.
I use cupcake liners, and I spray with olive oil cooking spray,they come out perfect. Bake for 20 minutes or until golden
on top. I put Nutella on half of the batch for my young one. Enjoy!

Crustless Nut Pie
Preheat oven to 350*
Ingredients:
2 cups walnuts
1 cup almonds
1 cup cranberries
8oz applesauce
1/4 cup honey
2 tsp vanilla
Recipe Mix:
Chop walnuts and almonds into pinky nail size pieces (I use a food processor to chop nuts). In bowl, mix all ingredients together
and pour into a 9" deep pie glass baking dish. Make sure oven is preheated, and bake for 35 minutes. You will find this
to have a light airy texture when you taste. I always make a heart on every pie I bake. Delicious!!

Healthy Blueberry Oats Crisp
Preheat oven to 350*
Ingredients:
1 pint blueberries
1 tsp cinnamon
1 cup quick oats
2 - 4 oz. snack cups applesauce
1/2 raw unsalted almonds
1/2 cup raw unsalted walnuts (chop into pieces)
1 packet Maple & Brown Sugar Weight Control Oatmeal (oatmeal)
cool whip (optional)
Recipe Mix:
Olive oil spray a 9" pie glass baking dish. Rinse blueberries and place into bottom
of dish, don't dry them. Sprinkle cinnamon evenly over the blueberries. Next, mix the oats, applesauce, almonds and walnuts
in bowl. Evenly spoon over cinnamon blueberries. Now sprinkle the packet of oatmeal over the mixture. This will satisfy your
sweet craving or you can just sprinkle the mixture with some brown sugar instead of the packet of oatmeal. Now bake for 30
minutes. Serve warm topped 2 tablespoons of lite cool whip. Yummy!!
