Preheat oven
to 350*
Ingredients:
4 cups oats
2 cups vanilla fat-free yogurt
8oz applesauce, unsweetened
1 tsp rum flavor
3 bananas, peeled
Handful chopped walnuts, optional
Recipe Mix:
Olive oil spray
your loaf pan. Mix all ingredients in order listed. Scoop into pan and bake 41 minutes, tent with foil and bake another 10
minutes. You can use large muffin cup pan, bake 33 minutes, will make 15 muffins!

Preheat
oven to 350*
Ingredients:
3 cups oats
1 cup spelt flour
1 tsp baking powder
2 tsp cinnamon
2 cups of hot water
1 Tbsp almond flavor
1/4 cup raw honey
Recipe Mix:
Olive oil spray your
loaf pan. Mix all ingredients in a large bowl in order listed. Now scoop into your loaf pan. Bake 51 minutes, top with
foil bake another 21 minutes. Remove loaf from pan place on cooling rack. Lightly spread honey on top. YUMMY!!

Ingredients:
4 cups gluten-free flour
1 cup oats
1 tsp baking powder
1/2 tsp
baking soda
1 3/4 cup water
1 Tbsp lemon flavor
3 apples, rinsed, chopped
1 cup cranberries, rinsed
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in order listed, then scoop into baking pan.
Bake 51 minutes, cover with foil bake another 15 minutes. I serve this with peanut butter and honey. Just a tad of one or
the other, watch portion control. This is a huge loaf!!

Gluten-Free Blueberry Lemon Bread With Walnut Crumb
Preheat oven to 350*
Ingredients:
3 cups oat flour
1 cup gluten-free flour
1 tsp
baking powder
3/4 tsp baking soda
1 tsp cinnamon
2 cups hot water
1 Tbsp lemon flavor
1 cup blueberries
3/4 walnuts, pureed into walnut meal

Mix:
Olive oil spray your loaf pan. In a large bowl mix your oats, powder, soda well and then add cinnamon, mix.
Next add water, lemon flavor and blueberries. Now scoop into your loaf pan, then evenly sprinkle walnut meal on top of loaf
mixture, and press meal into mix gently with spoon. Bake 51 minutes, then lay foil over top and bake another 21 minutes. Remove
and let cool, this bread is delicious right out of the oven, YUM!!

you let this bake the crispier it becomes, just watch so not to burn. Also, I always add a heart on top of everything I bake
before serving, my one special ingredient..IS LOVE, I always say that to my kids, I love being a MOM!!

1/2 tsp baking powder
1 1/4 cups milk, skim
1 egg, beaten
1 Tbsp vanilla

Olive
oil spray your loaf pan. Mix all ingredients in order listed, then use hands to mix bananas well into the batter, should be
sticky. Now scoop batter into loaf pan and bake for 40 minutes til golden on top. If your using oat flour, just substitute
for same amount as the white.

4 1/2 cups of oats, used food processor to pulse
to flour
2 tsp baking powder
2 1/2 cups hot water
1 Tbsp almond flavor
2 oranges, peeled, separated into pieces
3/4 walnuts

listed in large bowl. Now scoop into pan and bake 41 minutes. Tent with foil and bake another 26 minutes. Remove from pan

4 cups garbanzo - fava flour

2 cups water
1 Tbsp almond flavor

should be sticky and heavy. Bake 50 minutes, the tent with foil, bake another 14 minutes. Serve along side soup, great dipping
bread. Or eat with a bit of honey or peanut butter on top!

sheet with baking paper. Take 6 slices of bread and lay on top of baking paper. Now mix up 2 Tbsp olive oil, 2 Tbsp skim parmesan/romano

will be thick, but take your time blending peanut butter into mix. Olive oil spray your bread pan and scoop mixture into the
pan and bake 41 minutes. Tent with foil and bake another 14 minutes. This bread came out thick but in a cookie texture, so
be careful cutting. Really a good way to use up peanut butter!

2 1/4 cups oats

another 20 minutes. You can add any fruit or vegetable you like to this base bread. When you do add fruits or veggies, just
watch the mixture isn't getting to moist, should be sticky, just don't add as much water! DELICIOUS!!

Healthy Zucchini Bread
Preheat oven to 350*
Ingredients:
4 cups oats, pulsed into flour
1/2 tsp baking soda
1 1/2 cups water mixed with 2 tsp
yeast
4oz applesauce
1 Tbsp vanilla
1 medium zucchini, chopped finely
1 cup cranberries

2 cups strawberries, each sliced in half

Mix all ingredients in order listed, save 6 strawberries to go on top.
Now pour into a olive oil sprayed bread loaf pan. Place the 6 remaining strawberries on top, push into batter. Bake for 30
minutes, remove from oven, cover with foil, bake another 10 minutes. Should be golden on top. I serve this Nutella or honey,
YUM!

Preheat oven to 350*
Ingredients:
2 cups gluten-free flour
1 cup garbanzo / fava flour
1/2 tsp baking soda
1/2 cup water
3/4 cup egg substitute
4 oz applesauce
1 tsp vanilla

tsp cinnamon
2 slices, each 1 1/2" pineapple
Recipe Mix:
Mix all ingredients in a large bowl (batter should
be like a cake batter, nice and creamy thick). Place pineapple on the bottom of an olive oil sprayed bread pan, then pour
batter on top. Bake for 30 minutes and take a knife to check, should be clean after piercing, if not, cover with foil and
bake a few more minutes. Bread should be golden on top. Remove from oven and flip onto cooling rack, remove the baked pineapples.
Now flip bread back over and place pineapple on top, let cool. You can leave the pineapple on bottom, your choice. I serve
this warm with a bit of peanut butter or honey. Delicious!

Mix the 3 ingredients together in a bowl. Now form 6 balls and place in a olive oil sprayed 6 count
muffin baking pan. Bake for 20 minutes. Nice, Easy and delicious. Add raisins, nuts, or some cereal you need to finish up
for some crunch!!

Gluten-Free Crispy Italian Bread
Preheat oven to
oven 375*
Ingredients:
1 cup hot water
2 1/2 tsp yeast
2 cups Garbanzo Fava Flour
1 cup Oat Flour
2 Tbsp splenda
1
small chopped onion
1 Tbsp heaping chopped garlic
2 Tbsp olive oil
Recipe Mix:
In a bowl mix water and yeast, let
sit 5-10 minutes til foamy. Give bowl a whirl then add the flours and sugar, mix with olive oil sprayed hands for several
minutes. The dough will be sticky, next add the onion and garlic, mix well with hands. Again, your dough will be sticky. Cover
dough and let sit for 2 hours, then mix with hands again for several minutes. Your dough will not have much rise. Now, olive
oil spray a piece of baking parchment paper and shape your dough into a log. Drizzle your 2 Tbsp. of olive oil evenly over
the bread, use your fingers to spread. Bake for 30 minutes or until golden. This is a delicious bread that will have a crispy

Italian Spelt Bread With Pesto Dip
Preheat oven to 350*
Ingredients:
2 tsp yeast
1/4 cup water
1/4 cup olive oil
3/4 cup water
2 Tbsp applesauce
3 cups spelt flour
Recipe Mix:
Mix yeast with 1/4 cup of water
and let sit for 10 minutes, allowing it to become foamy. Then add rest of the ingredients, add a little water if needed til
dough is a nice firm dough ball. I wet my hands then and just knead in bowl for 4 minutes. Next, place the dough in a large
olive oil sprayed bowl. Cover with plastic wrap and let sit 2 1/4 hours. Then knead again in hands for several minutes and
divide dough into two even balls. Line a baking sheet with parchment paper and spray with olive oil spray. Now gently shape
each ball into a log, around 11" x 3" in size.
Loosely cover with plastic wrap and let sit for 1 1/4 hours.
Slice a 1/2" deep line down center of each log. Bake for 35 minutes, should be golden on top. Careful not to over bake.
Should have a light texture on inside, and crispy crust.
Pesto
Ingredients:
1/2 cup olive oil
2 Tbsp light
balsamic vinaigrette
2 Tbsp parmesan cheese, grated
2 Tbsp chopped garlic
1 Tbsp oregano
pepper
Recipe
Mix:
Mix all ingredients together, pepper to taste. Let sit for several hours to marinate. For a bit of a bite, add
some crushed red pepper :O

Banana/Garbanzo/Fava/Oats Muffins
Preheat oven to 375*
Ingredients:
1 cup garbanzo & fava flour
1 cup quick oats
1/4 tsp each baking soda/powder
1/4 tsp each ginger / cloves
4 oz applesauce
1/3 cup fat
free milk
3 bananas
1/3 cup flaxseed (optional)
Recipe Mix:
Mix flour, oats, soda, powder, cloves
and ginger. Next, add applesauce, milk and bananas. I like to throw in flaxseed, so good for you. Pour batter into olive oil
sprayed 12 count muffin pan. Bake for 23 minutes or until golden brown. I top these at dinner for our carb with a tsp. of
nutella. Yum!!

Oat Flour Donuts
Preheat Oven to 400*
Ingredients:
1 cup oat
flour
1/4 tsp baking soda
2 cup blueberries
1/2 cup cranberries
1/4 cup honey
4oz applesauce
1/4 tsp cinnamon
1/4 tsp nutmeg
Recipe Mix:
Mix all ingredients in order listed. Evenly fill a mini 12 count donut cup baking pan. Bake 11 minutes or
til golden on top. I like to serve these with dinner as our carb with a tsp of either raw honey or tsp of peanut butter on
top. :)
