Banana Rum Bread, NO BUTTER/OIL
Preheat oven to 350*
Ingredients:
4 cups oats
2 cups vanilla fat-free yogurt
8oz applesauce, unsweetened
1 tsp rum flavor
3 bananas, peeled
Handful chopped walnuts, optional
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in order listed. Scoop into pan and bake 41 minutes, tent with foil and bake another 10 minutes. You can use large muffin cup pan, bake 33 minutes, will make 15 muffins!

Honey Glazed Bread

Preheat oven to 350*
Ingredients:
3 cups oats
1 cup spelt flour
1 tsp baking powder
2 tsp cinnamon
2 cups of hot water
1 Tbsp almond flavor
1/4 cup raw honey
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in a large bowl in order listed. Now scoop into your loaf pan. Bake 51 minutes, top with foil bake another 21 minutes. Remove loaf from pan place on cooling rack. Lightly spread honey on top. YUMMY!!

Gluten-Free Cranberry Apple Bread
Preheat oven to 350*
Ingredients:
4 cups gluten-free flour
1 cup oats
1 tsp baking powder
1/2 tsp baking soda
1 3/4 cup water
1 Tbsp lemon flavor
3 apples, rinsed, chopped
1 cup cranberries, rinsed
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in order listed, then scoop into baking pan. Bake 51 minutes, cover with foil bake another 15 minutes. I serve this with peanut butter and honey. Just a tad of one or the other, watch portion control. This is a huge loaf!!

Gluten-Free Blueberry Lemon Bread With Walnut Crumb
Preheat oven to 350*
Ingredients:
3 cups oat flour
1 cup gluten-free flour
1 tsp baking powder
3/4 tsp baking soda
1 tsp cinnamon
2 cups hot water
1 Tbsp lemon flavor

1 cup blueberries
3/4 walnuts, pureed into walnut meal
Recipe Mix:
Olive oil spray your loaf pan. In a large bowl mix your oats, powder, soda well and then add cinnamon, mix. Next add water, lemon flavor and blueberries. Now scoop into your loaf pan, then evenly sprinkle walnut meal on top of loaf mixture, and press meal into mix gently with spoon. Bake 51 minutes, then lay foil over top and bake another 21 minutes. Remove and let cool, this bread is delicious right out of the oven, YUM!!

EASY Gluten-Free Oat Bread
Preheat oven to 350*
Ingredients:
4 cups oats
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
2 cups hot water
1 Tbsp lemon flavor
cranberries for heart shape
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in order listed, except cranberries. Now put cranberries on top or any fruit to shape a heart. Bake 51 minutes. The longer you let this bake the crispier it becomes, just watch so not to burn. Also, I always add a heart on top of everything I bake before serving, my one special ingredient..IS LOVE, I always say that to my kids, I love being a MOM!!

1 Tbsp baking powder
1 Tbsp cinnamon
2 cups fat-free vanilla yogurt
1 Tbsp rum flavor

Recipe Mix:
Olive oil spray your loaf pan. In large bowl mix all ingredients one at a time as listed except honey, stir well. Now scoop mixture into loaf pan, then drizzle with honey, use spoon to press into mixture. Bake 51 minutes, will be golden/puffy on top. Cover with foil loosely and bake another 21 minutes. Really good pudding type of texture, but firm. DELICIOUS!!

Banana Bread
Preheat oven to 350*
Ingredients:
3 cups all purpose bread flour
1/2 tsp soda
1/2 tsp baking powder

1 1/4 cups milk, skim
1 egg, beaten
1 Tbsp vanilla
2 tsp cinnamon
3 bananas
Recipe Mix:

Olive oil spray your loaf pan. Mix all ingredients in order listed, then use hands to mix bananas well into the batter, should be sticky. Now scoop batter into loaf pan and bake for 40 minutes til golden on top. If your using oat flour, just substitute for same amount as the white.

Orange Oat Bread
Preheat oven to 350*
Ingredients:
4 1/2 cups of oats, used food processor to pulse to flour
2 tsp baking powder
2 1/2 cups hot water
1 Tbsp almond flavor
2 oranges, peeled, separated into pieces
3/4 walnuts
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in order listed in large bowl. Now scoop into pan and bake 41 minutes. Tent with foil and bake another 26 minutes. Remove from pan and cool on cooling rack. Enjoy!!

Cantaloupe Oat Bread
Preheat oven to 350*
Ingredients:
4 cups oats, pulsed into flour
2 tsp baking powder
2 1/2 cups hot water
1 Tbsp almond flavor
2 tsp cinnamon, or more to your taste
1 cup cantaloupe
Recipe Mix:

Preheat oven and mix all ingredients in a large bowl. Scoop batter into a olive oil sprayed bread pan, bake 41 minutes, cover with foil and bake another 10 minutes or til golden on top. **Note batter should be sticky with a thick feel, add more oats or water if needed.

Promegranate Seed Oat Bread
Preheat oven to 350*
Ingredients:
4 cups oats
1 tsp baking powder
2 tsp cinnamon
1 1/2 cups hot water
1 Tbsp almond flavor
1 1/2 cups promegranate seeds
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in order listed, and scoop into your loaf pan. Bake 40 minutes, tent, bake 8 more minutes. YUMMY!

Biscotti Bread, Gluten-Free
Ingredients:
4 cups garbanzo - fava flour
1 tsp baking powder
2 cups water
1 Tbsp almond flavor
2 Tbsp lemon juice

1 tsp cinnamon

Recipe Mix:
Olive oil spray your bread pan and mix all ingredients in a large bowl.Let sit 15 minutes til dough thickens a bit. Texture of dough should be sticky and heavy. Bake 50 minutes, the tent with foil, bake another 14 minutes. Serve along side soup, great dipping bread. Or eat with a bit of honey or peanut butter on top!

1 tsp baking soda
1 tsp baking powder
1 cup hot water
8oz applesauce
1 Tbsp garlic, chopped

1 Tbsp basil
1 tsp pepper
1 1/2 cups spaghetti squash, cooked
1/2 cup parmesan cheese, optional

Mix:
Combine all ingredients in a large bowl. Olive oil spray your loaf pan and scoop mixture into pan. Bake 51 minutes. A great way to use up spaghetti squash!!

Just Too Good, APPLE BREAD
Preheat oven to 350*
Ingredients:
3 cups of oats, pulsed into flour
1 cup rye flour
1 tsp baking powder
2 1/2 cups hot water
1 Tbsp lemon flavor
3 cups chopped apples

Recipe Mix:
Olive oil spray your bread pan. Mix all ingredients in order listed, use your hands to mix when you add the apples. Sprinkle with cinnamon, I use a lot!! Now scoop into pan, and bake 41 minutes. Remove from oven, slice gently down middle 1/2" into loaf, place foil on top and bake another 21 minutes. Enjoy!

Got some bread you want to use up? Preheat oven to 450*. Line cookie sheet with baking paper. Take 6 slices of bread and lay on top of baking paper. Now mix up 2 Tbsp olive oil, 2 Tbsp skim parmesan/romano grated cheese, sprinkle of pepper, 2 tsp basil and 1 Tbsp garlic. Spread evenly onto bread. Bake 8 minutes til golden. Delicious!!

1 tsp baking powder
2 1/2 cups hot water
1 Tbsp vanilla
1/2 peanut butter
Recipe Mix:
Mix first 4 ingredients, then add peanut butter. Texture will be thick, but take your time blending peanut butter into mix. Olive oil spray your bread pan and scoop mixture into the pan and bake 41 minutes. Tent with foil and bake another 14 minutes. This bread came out thick but in a cookie texture, so be careful cutting. Really a good way to use up peanut butter!

2 1/4 cups oats
1 tsp baking powder

Good Way To Eat Dark Chocolate Cocoa Almonds
Preheat oven to 350*
Ingredients:
3 cups oat flour
1 cup rye flour
2 Tbsp flaxseed
1 1/2 tsp baking powder
2 cups of melon, pureed
Handful dark chocolate cocoa roast almonds
Recipe Mix:
Olive oil spray your loaf pan. Mix all ingredients in a large bowl, except almonds. Now place almonds into the top of mixture, 1/2 way in. Bake 31 minutes, then cover with foil and cover 20 minutes. Delicious!

When you do add fruits or veggies, just watch the mixture isn't getting to moist, should be sticky, just don't add as much water! DELICIOUS!!

4 cups oats, pulsed into flour
1/2 tsp baking soda
1 1/2 cups water mixed with 2 tsp yeast
4oz applesauce
1 Tbsp vanilla

1 cup cranberries

Now add the melon, mix well and evenly pour batter into the pans, let sit 30 minutes. Bake 41 minutes, pierce down center if you want the texture more firm, tent with foil and bake 10 - 15 minutes more. Serve with honey or peanut butter, deliciously sweet!!

Olive oil spray 2 bread pans. Mix all ingredients in a large bowl. Do in the order I have listed, stir after each ingredient. Batter should be thick and sticky. Save the nuts for only one of the loaves. Now evenly scoop the batter into the 2 pans. Now take your cup of walnuts and press down into the batter of the pans. Bake for 40-45 minutes, til golden. Enjoy!!

Delicious Arugula Muffins

2 cups non-gluten flour
1 1/2 spelt flour
1/2 tsp baking soda
1/2 tsp baking powder
1 cup hot water

5oz arugula, chopped finely
1 cup almonds, chopped
1/4 cup honey
Recipe Mix:

Mix all ingredients in a large bowl. Now evenly scoop batter into a 12 cup olive oil sprayed muffin baking pan. Bake 20 to 25 minutes til golden on top. These really came out delicious. Perfect with a bit of raw honey on top. Enjoy!

2 cups strawberries, each sliced in half
Recipe Mix:
Mix all ingredients in order listed, save 6 strawberries to go on top. Now pour into a olive oil sprayed bread loaf pan. Place the 6 remaining strawberries on top, push into batter. Bake for 30 minutes, remove from oven, cover with foil, bake another 10 minutes. Should be golden on top. I serve this Nutella or honey, YUM!

Upside Down Pineapple Gluten-Free Bread
Preheat oven to 350*
Ingredients:
2 cups gluten-free flour
1 cup garbanzo / fava flour
1/2 tsp baking soda

1/2 cup water
3/4 cup egg substitute
4 oz applesauce
1 tsp vanilla
1 tsp cinnamon
2 slices, each 1 1/2" pineapple

Recipe Mix:
Mix all ingredients in a large bowl (batter should be like a cake batter, nice and creamy thick). Place pineapple on the bottom of an olive oil sprayed bread pan, then pour batter on top. Bake for 30 minutes and take a knife to check, should be clean after piercing, if not, cover with foil and bake a few more minutes. Bread should be golden on top. Remove from oven and flip onto cooling rack, remove the baked pineapples. Now flip bread back over and place pineapple on top, let cool. You can leave the pineapple on bottom, your choice. OAT BALLS
Preheat oven to 350*
In
gredients:
2 cups of oats
8oz applesauce
tsp vanilla
Recipe Mix:
Mix the 3 ingredients together in a bowl. Now form 6 balls and place in a olive oil sprayed 6 count muffin baking pan. Bake for 20 minutes. Nice, Easy and delicious. Add raisins, nuts, or some cereal you need to finish up for some crunch!!

Gluten-Free Crispy Italian Bread
Preheat oven to oven 375*
Ingredients:
1 cup hot water
2 1/2 tsp yeast
2 cups Garbanzo Fava Flour
1 cup Oat Flour
2 Tbsp splenda
1 small chopped onion
1 Tbsp heaping chopped garlic
2 Tbsp olive oil
Recipe Mix:
In a bowl mix water and yeast, let sit 5-10 minutes til foamy. Give bowl a whirl then add the flours and sugar, mix with olive oil sprayed hands for several minutes. The dough will be sticky, next add the onion and garlic, mix well with hands. Again, your dough will be sticky. Cover dough and let sit for 2 hours, then mix with hands again for several minutes. Your dough will not have much rise. Now, olive oil spray a piece of baking parchment paper and shape your dough into a log. Drizzle your 2 Tbsp. of olive oil evenly over the bread, use your fingers to spread. Bake for 30 minutes or until golden. This is a delicious bread that will have a crispy crust, great for dipping. Goes well with my Sweet Pepper Caraway Dip, see appetizer page. Enjoy!!

Italian Spelt Bread With Pesto Dip
Preheat oven to 350*
Ingredients:
2 tsp yeast
1/4 cup water
1/4 cup olive oil
3/4 cup water
2 Tbsp applesauce
3 cups spelt flour
Recipe Mix:
Mix yeast with 1/4 cup of water and let sit for 10 minutes, allowing it to become foamy. Then add rest of the ingredients, add a little water if needed til dough is a nice firm dough ball. I wet my hands then and just knead in bowl for 4 minutes. Next, place the dough in a large olive oil sprayed bowl. Cover with plastic wrap and let sit 2 1/4 hours. Then knead again in hands for several minutes and divide dough into two even balls. Line a baking sheet with parchment paper and spray with olive oil spray. Now gently shape each ball into a log, around 11" x 3" in size.
Loosely cover with plastic wrap and let sit for 1 1/4 hours. Slice a 1/2" deep line down center of each log. Bake for 35 minutes, should be golden on top. Careful not to over bake. Should have a light texture on inside, and crispy crust.
Pesto
Ingredients:
1/2 cup olive oil
2 Tbsp light balsamic vinaigrette
2 Tbsp parmesan cheese, grated
2 Tbsp chopped garlic
1 Tbsp oregano
pepper
Recipe Mix:
Mix all ingredients together, pepper to taste. Let sit for several hours to marinate. For a bit of a bite, add some crushed red pepper :O

Banana/Garbanzo/Fava/Oats Muffins
Preheat oven to 375*
Ingredients:
1 cup garbanzo & fava flour
1 cup quick oats
1/4 tsp each baking soda/powder

1/4 tsp each ginger / cloves
4 oz applesauce
1/3 cup fat free milk
3 bananas
1/3 cup flaxseed (optional)
Recipe Mix:
Mix flour, oats, soda, powder, cloves and ginger. Next, add applesauce, milk and bananas. I like to throw in flaxseed, so good for you. Pour batter into olive oil sprayed 12 count muffin pan. Bake for 23 minutes or until golden brown. I top these at dinner for our carb with a tsp. of nutella. Yum!!

Oat Flour Donuts
Preheat Oven to 400*
Ingredients:
1 cup oat flour
1/4 tsp baking soda
2 cup blueberries
1/2 cup cranberries
1/4 cup honey
4oz applesauce
1/4 tsp cinnamon
1/4 tsp nutmeg
Recipe Mix:
Mix all ingredients in order listed. Evenly fill a mini 12 count donut cup baking pan. Bake 11 minutes or til golden on top. I like to serve these with dinner as our carb with a tsp of either raw honey or tsp of peanut butter on top. :)

Chia Biscuits
Preheat oven to 425*
19 Muffins
Ingredients:
1 cup hot water
2 Tbsp olive oil
2 1/2 Tbsp splenda
2 1/2 cups oats
1 cup oat flour
1/2 cup chia seed (ground)
2 1/2 tsp quick rise yeast
Recipe Mix:
Mix all ingredients in order listed, dough should be sticky. If you find dough is too wet, just add a bit more flour or oats. Or if too dry, add more water. Once mixed, let dough sit for one hour in covered bowl. Olive oil spray each muffin tin and fill half full. Bake 17 minutes or until golden. If you prefer to have a sweet taste to these, add a handful of cranberries or raisins. We like to eat these at dinner with a teaspoon of raw honey or peanut butter spread on top. My little one loved these!
Note: you can grind the chia seed in your coffee maker.  YUMMY!!

 Spelt Muffins
Preheat Oven to 425*
Ingredients:
2 1/4 cups spelt flour
1 cup oats
1/4 cup organic honey
1 Tbsp. baking powder
1 1/4 cup organic fat free milk
3/4 cup egg beaters
1 snack size cup organic apple sauce
1 Tbsp. vanilla
3/4 cup of cranberries (optional)
Recipe Mix:
Olive oil spray muffin pan. Mix all ingredients together. Fill each muffin cup half full. Bake for 25 minutes, til lightly golden on top.
Enjoy!!

Sproat Bread
Preheat oven to 350*
Ingredients:
1 1/4 cups hot water
1 snack size cup applesauce
1 Tbsp olive oil
1 cup oats
2 cups spelt flour
1 1/2 tsp yeast
handful of dried cranberries
Recipe Mix:
In bowl, mix water, applesauce, olive oil and oats. Add flour and yeast, mix well, and add cranberries. Texture should be sticky, not  to wet or dry...add water or a bit more flour to have a good sticky thick dough. Let sit in greased bowl for 30 minutes. Place dough into a lightly olive oil spray a bread pan.  Bake in preheated oven for 55 minutes. Check at 40 minutes, if top is beginning to brown, place a piece of foil over the top to prevent burning, and continue baking.  Serve warm or toasted with raw honey or peanut butter. Enjoy!
